We honor natural fermentation cycles, with no shortcuts, because kombucha made slowly tastes and feels different. Brewing with Intention We use a slow-batch fermentation process (7 to 21 days). SCOBYs are multi-generational, grown from our first-ever mother culture. Some batches are moon-rested or exposed to gentle sunlight, connecting our brews to the ancient yin-yang energy cycles.
